Last week a friend of mine brought in pesto pasta for lunch and I immediately got a craving for it. So tonight for dinner I made my version of chicken pesto spaghetti. I usually make my own pesto, but I left my food processor at home so I bought a basil pesto from the grocery store. The standard ingredients that make a basil pesto sauce are fresh basil leaves, pine nuts, garlic, parmesan cheese, salt and pepper, and olive oil. Additionally, I  added a little bit of lemon juice as a way to enhance the flavour.

As for the chicken part of this meal, I grilled the chicken on the BBQ after marinating the chicken for two hours in a pesto sauce. The recipe is great because its quick, easy to make, and only has four ingredients-  pesto, vinegar, salt, and sugar. The chicken turned out pretty well, however, going forward I would put less pesto on the chicken because the flavour was quite intense when combined with the pasta.

This recipe was an overall success! It took me 20 minutes to make the entire thing. I would like to make this recipe again but add sundried tomatoes and possible onions to add more texture and flavour to the dish.
